Cacao vs Cocoa: What's the Difference — And Which One Should You Use? 🍫
If you've ever stood in the baking aisle wondering whether you should buy cacao powder or cocoa powder, you're definitely not alone!
They look almost identical.
They both taste chocolatey.
And recipes often seem to use the words interchangeably.
So… what's the difference?
And does it actually matter which one you use?
Let's unpack the chocolatey confusion. 🍫😋
🍫 First things first: They're related!
Both cacao and cocoa come from the same plant — the cacao tree.
The difference is largely in how the beans are processed.
Cacao beans are harvested from cacao pods, fermented, dried and then processed into products such as cacao powder.
Cocoa powder generally undergoes additional processing, including roasting, before being ground into powder.
So they're not completely different foods.
Think of them as close cousins in the chocolate family.
🌱 So what exactly is cacao powder?
Cacao powder is made from cacao beans that have been processed at relatively low temperatures before being ground into a fine powder.
It has a wonderfully rich, slightly bitter chocolate flavour.
And because it isn't sweetened, cacao powder is not the same thing as drinking chocolate.
This is important!
If you buy a bag of cacao powder expecting something sweet and creamy that you can simply stir into hot milk, you may be in for a surprise. 😂
Cacao is naturally quite intense.
But that's exactly what makes it so useful in cooking and baking.
🍫 And what about cocoa powder?
Cocoa powder is generally made from cacao beans that have been roasted and processed.
It tends to have a smoother, more familiar chocolate flavour and is commonly used in traditional baking.
Think:
🍰 Chocolate cake
🧁 Chocolate cupcakes
🍪 Brownies
🍫 Chocolate biscuits
🥞 Pancakes
🍮 Chocolate desserts
If a recipe simply says "cocoa powder", it's usually referring to the conventional roasted cocoa powder.
🤔 Which one is healthier?
This is where things can get a little overcomplicated online.
You'll often see cacao described as a "superfood" and cocoa as the less desirable option.
But the reality is more nuanced.
Both cacao and cocoa can contain naturally occurring compounds such as polyphenols and minerals, and both can be part of a balanced diet.
Processing can affect the nutritional composition, but it's not as simple as saying:
cacao = good
cocoa = bad
What matters just as much is what you're actually buying and how you're using it.
A spoonful of unsweetened cacao powder in your breakfast is one thing.
A chocolate dessert made with lots of sugar, butter and cream is something else entirely — even if it contains cacao!
So don't let the health-food marketing make things unnecessarily complicated.
🥄 How can you use cacao powder?
This is where cacao powder really earns its place in the pantry.
You can use it in:
🥣 Breakfast
Add a spoonful to:
-
Overnight oats
-
Porridge
-
Smoothies
-
Chia puddings
-
Yoghurt
Try combining cacao with banana, nut butter and your favourite milk for an easy chocolatey breakfast or snack.
🧁 Baking
Cacao powder works beautifully in:
-
Brownies
-
Chocolate muffins
-
Cakes
-
Cookies
-
Energy bites
-
Pancakes
Just remember that cacao can have a slightly more intense, bitter flavour than conventional cocoa, so you may need to adjust the sweetness of your recipe.
☕ Drinks
One of our favourite ways to use it is in a warm drink.
Try:
1 cup almond or macadamia milk
1 tsp cacao powder
½ tsp cinnamon
A little honey or maple syrup to taste.
Warm gently, whisk well and enjoy.
Chocolate comfort without reaching for a packet of instant hot chocolate. 🍫☕
🍌 A very easy chocolate snack
Here's a little idea for when the chocolate cravings hit.
Chocolate Chia Pudding
Mix together:
-
2 tbsp chia seeds
-
1 tbsp cacao powder
-
½–¾ cup almond or macadamia milk
-
½ mashed banana
-
A little honey or maple syrup, if needed
Stir really well.
Leave in the fridge for a few hours or overnight.
Top with banana, nuts, coconut or a spoonful of nut butter.
No complicated recipe. No fancy ingredients. Just pantry staples.
That's our kind of cooking. ❤️
⚠️ One thing to watch: not all "cocoa" products are the same
When you're shopping, don't confuse pure cacao/cocoa powder with sweetened chocolate drink powders.
Always check the ingredients.
A pure cacao or cocoa powder should be just that — cacao/cocoa.
A chocolate drink mix may contain sugar, milk powder, flavourings or other ingredients.
Neither is necessarily "bad", but they're different products designed for different purposes.
At NutriSource, we're all about helping you understand what's actually in the products you're buying.
🍫 So... cacao or cocoa?
The answer is:
It depends what you're making!
If you're looking for a minimally processed, intensely chocolatey powder for smoothies, breakfast bowls, homemade drinks and baking, cacao powder is a fantastic pantry staple.
If you're following a traditional recipe that specifically calls for cocoa powder, conventional cocoa may be the better choice.
And in many recipes, you can experiment with substituting one for the other — just remember that they can differ in flavour, colour and acidity, so the result may not be exactly the same.
